Tahini Sauce (sesame-seed sauce):

  • 1 cup Tahini paste
  • 2/3 cup water
  • ½ tsp salt (or to desired taste)
  • 6 tbsp lemon juice
  • 2 tsp minced garlic
  • 1 tbsp chopped parsley
  • 1 box Casbah Falafel Mix*
  • 1 bag Joseeph Middle East Whole Wheat Pita Bread*
  • Fresh romaine lettuce leaves
  • Fresh sliced tomato wedges

Prepare tahini sauce by blending together the first six ingredients listed above. Set aside in the refrigerator. Prepare falafel balls as directed on box. * [Any brand of falafel mix or whole wheat pita bread may be used in place of the brand names mentioned above.] Cut pita bread into halves and stuff each halved pocket with lettuce leaves, 3 or 4 hot falafel balls and sliced tomatoes. Pour a bit of tahini sauce over the top and enjoy. Serves 6.
